This year Thanksgiving may mean you’re staying home alone, or with the people you live with, and it doesn’t have to be tragic! This holiday is about practicing gratitude, and eating delicious food! And so, I would like to thank you for listening to Mix 1065 and let you know that I appreciate you… SO MUCH!
I also want to share with you this recipe for an autumn fruit salad. It could be served as breakfast on Thanksgiving or a side dish, or really any day, any time. I am riffing off a recipe I read in Parade and I’m telling you it is SO YUMMY! And easy! You can always adjust the amounts and add or subtract ingredients, but here’s what I used:
4 apples chopped
¾ cup pecans
½ cup dried cranberries
3 blood oranges, halved. (OR 1 can mandarin oranges)
(Red seedless grapes, halved are part of the original recipe, I just didn’t have any when I made it this time.)
For the dressing:
1 cup vanilla yogurt (I used coconut milk yogurt – YUM)
2 teaspoons lemon juice
3 Tablespoons brown sugar
1 scant teaspoon cinnamon
Cut the apples and soak them in lemon juice to avoid browning. Mix together the fruit, but add the pecans and dressing just before serving.
